Asun Recipe – How to Make Asun Meat | Peppered Goat Meat

How to Make Asun Recipe – Peppered Goat Meat Recipe

Just like I said earlier boiling and then frying or grilling of the beef takes a little time, while some prefer roasted /smoked Goat Meat in making Asun. Whichever method sounds great and turn out beautiful and delicious; ingredients and cooking procedure are listed below:

Ingredients

  • 1 kg Goat meat (cut with skin)
  • ½ cup habanero peppers (Atarodo)
  • 1 medium size onion
  • 2-3 stock cubes
  • 1 teaspoon thyme
  • ½ tsp garlic
  • 1 teaspoon curry
  • 1 cooking spoon of vegetable oil
  • 1 green or red bell pepper (Optional)
  • Salt to taste

Serve with

  • Fried plantain
  • Pepper sauce

 

How to Marinate Goat Meat (Asun)

First of all, ensure you cut the meat into chunks with some goat skin. Actually, the skin is what makes up Asun.

Secondly, wash and transfer into a bowl, thereafter, add your curry, garlic, stock cubes, salt, and thyme. Simply add any other spices and ingredients of your choice to marinate meat.

Thirdly, gently rub with your hands to Mix the goat meat and the spices.

Next is to cover your bowl with a thin film (nylon). Transfer into the fridge and leave/allow to marinate for about 1 hour; if you have enough time make it overnight.

Assuming there is no time for marinating beef, then skip the marinating process because it’s completely optional and just go straight and cook the goat meat.

 

Instructions – How to Make Asun Peppered Goat Meat

  1. Transfer the meat into a cooking pot, pour enough water into meat, then add just half chunk slices of onion and cook on medium heat; cook for about 45 minutes to 1 hour.
  2. Cook until the goat meat is soft and tender and well cooked, remove from the goat meat stock into an oven rack place the goat meat flat, and start grilling, smoking, or fry with vegetable oil until golden brown. (Whichever way you prefer).
  3. Roughly blend red or green bell pepper, habanero peppers (scotch bonnet peppers), and half onions.
  4. Finally, heat up a little amount of vegetable oil in a wok. Add onion and stir fry, then the chopped peppers and the grilled goat meat. Use a pan (frying pan) assuming you don’t have a wok as an alternative.
  5. Stir fry the goat meat and pepper sauce for about 3-5 minutes, taste for salt before taking it off the heat.

Serve your Asun peppered goat meat with fried plantain and tomato sauce.
