  • Firstly, Peel the cocoyams and wash properly.
  • Secondly, slice the cocoyams into chips using a local slicer (Irin-isu), mandoline slicer, or cut thinly with a knife or you can use the slicing side of a box grater to slice.
  • Thirdly, after slicing place all the cocoyam into a bowl, mix water and salt and pour inside the cocoyam and set aside for about 10 minutes. Thereafter drain the water before frying.
  • In a deep pan (Frying pan) pour in your vegetable oil and bring to heat (allow the oil to be hot around 350 degree Fahrenheit hot).
  • Gently stir in the sliced cocoyams into the oil and let them fry in the oil while you continue to stir from time to time for about 5-7 minutes. At these point the cocoyam has dried up all the water in it and becomes crispy.
  • Finally, remove the chips and place them on a paper towel to absorb excess oil.
