Yam vegetable recipe is another healthy way of enjoying a palatable dish cooked with yam, a perfect combination of stir fry green leafy vegetable with yam porridge is delicious.

The Nigerian yam recipes are boiled yam and egg sauce, fried yam and stew, pounded yam swallow, yam porridge with plantain, roasted yam and fish sauce, porridge yam with tin tomatoes popularly called Asaro and the likes.

While the Igbo yam porridge vegetable is known as Ji Akwukwo Nri or Ji Abubor usually garnished with African oil bean (Ugba/Ukpaka) is a delicacy the Igbo’s don’t joke with especially during the new yam festival Iri Ji ohuru.

How to Cook Porridge Yam Vegetable Recipe

Nigerian sweet porridge yam and vegetable sauce side dish is the kind of food you will love to try at home, quite simple and easy to prepare.

Ingredients for Pottage

  • ½ tube of yam
  • 1 medium-size onion
  • 3 cooking spoons palm oil
  • ½ teaspoon chili pepper
  • 2 seasoning cubes
  • 2 teaspoons crayfish
  • Salt to taste

Ingredients for Vegetable Sauce

  • ½ kg chicken laps or Fish (optional)
  • 1 bunch leafy vegetables (Ugu, Green Amaranth, or Spinach)
  • 2-3 pieces fresh tomatoes
  • 1 medium-size onion
  • 4 scotch bonnet pepper (Atarodo)
  • 3 tablespoons groundnut oil
  • 1 stock cube
  • Salt to taste

Directions

  1. First and foremost, peel the yam, cut into cubes and wash, then set aside ready for use, wash and slice your onions for making porridge. Cook the chicken to tender and fry if any.
  2. Secondly, wash the green leafy vegetables and finely slice, then keep aside, wash and slice the onions, tomatoes, and pepper for the vegetable sauce.
  3. Thirdly, pour in the yam in a clean pot and add in the sliced onions, crayfish, chili pepper, seasoning cubes, palm oil, salt to taste and a moderate quantity of water that almost the same level with the yam.
  4. Fourthly, cover and place on stovetop and cook until the yam is soft when pears with knife or fork spoon, at this point turn consistently to enable the water to thicken and become pottage. Remove from heat and allow simmering, move to the next stage of stir-frying your vegetables.
  5. Finally, in a frying pan bring the groundnut oil to heat, stir in the sliced onions and sauté for 60 seconds, pour in the fresh tomatoes, pepper and fry to dry.
  6. Lastly, add seasoning cube, salt to taste, and stir in the vegetables and stir for 45 seconds and remove from heat.
