  • 2kg cow meat
  • 1 small glove of fresh garlic
  • 1 chop of fresh ginger
  • ½ medium white onion
  • 3 pcs bay leaves
  • 1 large red onion
  • ½ teaspoon curry powder and thyme
  • ½ teaspoon rosemary
  • 1 large green bell pepper
  • 4-6pcs shombo
  • 1/2 cup scotch bonnet
  • 1/2 teaspoon cinnamon powder
  • 1 red bell pepper
  • ½ teaspoon powdered turmeric
  • 2 seasoning cubes
  • Salt to taste
  • Vegetable oil for frying

Firstly, Cut your meat into Chunk sizes and thereafter, wash thoroughly using salt water

Secondly, wash the different pepper including the red and white onions you shared into 2, after that blend and set aside.

Thirdly, slice your remaining half red onion, next is to wash and chop the red and green bell peppers, set aside. Grate your fresh ginger and garlic.

Place your washed meat in a large bowl, add in your sliced onion, grated fresh ginger and garlic,  rosemary spice, turmeric powder, curry powder, thyme, seasoning cube and salt.

Marinade by using your hands to mix all the ingredients into the meat, cover and leave for about 20-30 minutes or overnight if you have enough time and allow the meat to absorb the spices.
