Fried Palm Oil Stew – How to Cook Palm Oil Stew

Ingredients

  • Tatashe – Red Bell Peppers
  • Scotch bonnet (Ata rodo)
  • 5 medium tomatoes
  • 2 large onions
  • Assorted meats
  • 4 Boiled Eggs (Optional)
  • 1.5 cups Palm oil
  • 2 Tbsp iru (Locust beans) optional
  • Kpomo (pomo) cow skin
  • 2 Tablespoons Crayfish 
  • 3 seasoning Cubes
  • Salt to taste

 

Instructions on How to make Palm Oil Stew

  1. Blend the fresh tomatoes, tatashe (bell peppers), Atarodo, and onions together. On a separate plate slice 1/2 size onion (chopped)
  2. Secondly, wash and season your meat, and cook to tender (soften).
  3. Thirdly, in a dry pot, Heat the palm oil (some people bleached their palm oil while some add vegetable oil a little bit). Well for this recipe I did not add vegetable oil nor bleach my palmoil.
  4. Stir in your chopped onions, and stir fry for 20 seconds before adding the blended tomato, pepper, and tatashe. Stir consistently until the water evaporated (dry).
  5. Lastly, add your meat stock with the meat, pomo inclusive, and stir thoroughly taste salt and add the seasoning cubes; thereafter allow to simmer for like 8 -10mins.

Finally, remove from the stove and add in your boiled eggs ready to serve. Delicious Ofada Sauce Recipe

Serving Suggestions

Serve with Rice, potatoes, spaghetti, or yam. It can also be eaten with ewedu or Okra soup and served with your favorite “Swallow”
