Jollof rice is a staple dish in Nigeria, Ghana, Cameroon, Liberia, Sierra Leone, Togo, and some other African countries that are now enjoying this food.
Moreover, for this quick and easy jollof rice, there is no need for a regular stirring of stew since there are no fresh tomatoes. Although for a flavorful taste certain Jollof secret ingredients like the Badia Jollof rice seasoning are added.
How to Cook Easy Jollof Rice Recipe
Ingredients
- 2 cups of rice
- 1 Tin tomato paste 200g
- 1 medium-size onion (finely sliced)
- 3 cloves garlic (diced)
- 2 cooking spoons veg oil
- ¼ teaspoon curry and thyme powder
- 2 seasoning cubes
- 1 teaspoon ground pepper
- ¼ teaspoon cinnamon powder
- ¼ teaspoon Badia Jollof rice seasoning
- Salt to taste

- 2 ripe bananas
- 4 hardboiled eggs
- 1 green pepper
Instructions
- First of all parboil your rice, wash and drain thereafter set aside ready for use. (while parboiling the rice you can include the raw eggs into the pot and cook at the same time).
- Secondly, in a pot bring the oil to heat, stir in your chopped garlic and fry for 2 minutes before stirring in the sliced onions, then stir in the tomato paste and fry for 5-7 minutes.
- Thirdly, add all spices ranging from curry, thyme, grounded pepper, cinnamon powder, badia Jollof rice seasoning, seasoning cubes, salt to taste.
- Lastly, add a little quantity of water that will cook the rice to doneness and cover allowing to boil before add pouring in parboiled rice stir to mix with the tomato sauce.
- Finally, cook on medium heat to soften and allow the water to dry completely before removing from fire. At this point your food is ready. Crack and remove the eggs shell, wash and slice your green pepper and banana.
Serve your rice with banana and boiled eggs as a side dish and sprinkle your green pepper on it.
