How to make Beans and Plantain Porridge – Beans Recipe
Ingredients
- 2 cups beans ( Black eye pea or brown beans)
- 2 ripe plantains
- 1 large onion
- 2 tablespoon crayfish
- 2 cooking spoons palm oil
- 1 teaspoon ground pepper or 6 pcs fresh pepper (Atarodo)
- 2 seasoning cubes
- Salt to taste
Directions
- First of all, before making beans in Nigeria, pick to remove any particles, wash and parboil for like 10 minutes, drain the water, thereafter, return back to your pot and start cooking to tender.
- Secondly, wash and slice the onions, set aside, ground the fresh pepper and crayfish.
- Thirdly, wash then peel the plantain skin, dice to your desired shape and size
- Finally, stir in all ingredients to the cooked beans, starting with the sliced plantains, palm oil, pepper, onions, crayfish, seasoning cubes, salt; and water that will be at the same level with the plantain. Cover and allow cooking untill the water is almost dry.
At this point, stir your beans with plantain then taste for salt before putting off the heat, allow resting for about 5 minutes.
