3 Ingredients Flourless Banana Muffins
Overripe bananas are ideal for this dish. Bananas that are overripe are sweeter and have a stronger banana flavor. While the recipe will work with barely ripened bananas, the banana flavor will be muted and the muffins will be less sweet.
Most nut butter will work in this recipe. If you enjoy peanut butter, a banana and peanut butter flavored muffin is a good choice. I recommend using almond butter or cashew butter if you like more banana taste and less nut flavor. I used unsweetened natural nut butter, but ordinary nut butter (the no-stir types prepared with oils) should also work. Sunflower seed butter can also be used as a nut-free substitute (I recommend SunButter brand.)

How to make Flourless Banana Muffins Recipe
Ingredients
- Bananas that are overripe
- Peanut Butter (or almond butter )
- Eggs
Instructions
Preheat the oven to 350 degrees Fahrenheit. Tiny muffin liners should be used to line mini muffin molds.
Combine all of the ingredients in a blender or food processor. Blend until smooth and consistent. The batter will be very thick.
Fill muffin liners 3/4 of the way filled with batter. Fill your muffin liners all the way to the top if you want your muffins to pop a lot over the top of the muffin liners.
Bake for 13-15 minutes, or until the muffins are plump and bounce back when you push down on them. Allow muffins to cool completely before serving. Muffins will sink somewhat as they cool. If muffins sink too much during baking, they may require more time.
Cooking Tips
These muffins are preferable as tiny muffins since they don’t rise as much as regular muffins.
Sunflower seed butter works well as a nut-free alternative.
Use overripe bananas whenever possible. They are actually sweeter with a strong banana flavor. If you use bananas that aren’t fully matured, the banana flavor will be muted.
