Egusi soup is one of Nigerian most popular soup; a sweet delicacy prepared using ground melon seed with assorted beef, stockfish, spices, palm oil, and choice vegetables to garnish the soup.
However, melon seed Egwusi is a popular cuisine in Africa scientifically known as Citrullus Vulgaris.
Melon seed is high in fat and also contains protein, although is a high cholesterol soup but can be made healthier by adding plenty of vegetables in other to increase the amount of vitamins, minerals, and fiber.
Nigerian Egusi soup goes by different names they are as follows, Ofe Egusi in Igbo, Miyar Agushi in Hausa, Obe Efo Elegusi in Yoruba language and Egwusi in Pidgin English Naija too much.
Egusi soup is a must serve in parties, events, weddings, and occasion, common soup in restaurants and any food outlet even Mama Buka’s point.
Homemade Egusi soup recipe, when specially cooked for dinner every member of the family will lick their fingers and always want to eat swallow until the soup is completely exhausted finished.
How to Cook Egusi Soup Boiling Method
- 3 cups of Egusi ground (Melon seeds)
- 1 kg of assorted meat
- ½ cup palm oil
- 1 medium-size stockfish
- 2 medium-size dry fish
- 2 tablespoons crayfish
- 1 teaspoon Okpei, Dawa Dawa (locust beans)
- 2 cups fluted pumpkin leaves (finely sliced)
- Seasoning cubes
- 1 cup Uziza leaves (finely sliced)
- 1 sachet Onga classic
- 2 teaspoons ground scotch bonnet pepper
- Salt to taste
Method of preparation
- Wash the assorted meats, place in a cooking pot, after that, add seasoning cubes, Onga classic, and salt, cook for 15 minutes, wash the stockfish and add to the boiling meat, then continue cooking until done.
- Secondly, pour in the palm oil, crayfish, pepper, okpei, and washed dry fish allow cooking for another 5 minutes.
- In a bowl pour in the grind egusi and mix with warm water until a paste-like consistency is from, gently stir in the egusi into the boiled meat stock and continue cooking for like 10 minutes
- Finally, pour in the already sliced vegetables, stir and remove from heat cover allow to sit for 2 minutes open and stir, at this point the leaves looks greenish we call it half-done veggie in egwusi soup.
How to Cook Egusi soup Frying Method
- Cooking Egwusi the frying method is so simple and more delicious, eye-catchy compare to the ordinary method of boiling.
- Wash spice and cook the assorted meat, stockfish or chicken with enough water that forms the stock until done, and then set aside for later use.
- In a clean dry pot pour in the palm oil, heat, next is to stir in the Egwusi into the palm oil, continue to stir fry don’t allow it stick on the bottom of the pot.
- Stir fry the consistency until it shrinks in size and thick, afterward, remove from heat, return the cooked meat to the heat and pour in the fried egusi into the pot, add in your crayfish, pepper, dry fish, okpei, seasoning cubes, and salt cook for about 10 minutes
- Lastly, add the pumpkin and uziza leave stir properly and remove from fire, soup is ready, what an appetizing and palatable meal, good food that nourishes the body.
Serve and enjoy with Eba, Semo, Fufu, Amala, or wheat swallow.
