Chicken Salad Recipe – Cabbage Core

Fried chicken salad recipe is one of my favorite dishes which are certainly best enjoyed as a whole meal, in the same vein as a side dish even more as a dessert.

For fried chicken

1kg soft chicken (thighs or wings)

2 cups of vegetable oil (non-fat oil)

1 teaspoon salt

2 cubes of seasoning

1 large size onions (dice)

1 teaspoon ginger powder

½ teaspoon garlic powder

¼ teaspoon curry powder

½ teaspoon thyme

For salad – core cabbage

1 medium size cabbage

3 medium size carrots

1 handful green beans

1 medium size cucumber

2 eggs boiled and chop


Method of preparation

Wash your chicken place in a pot after that add the following ingredients salt, dice onions, seasoning cubes, ginger, garlic, curry and thyme with a cup of water and cook for about 30 – 45 minutes or using a fork to test if can pierce without struggle else continue to cook until is finally soft. Remove from pot as you place on a sieve allowing cooling before frying.

Meanwhile, you can fry using dip fryer or frying pan, but in case it a frying pan ensure it is clean and dry. Then place on the fire pour in the vegetable oil allow to heat a bit for 2 minutes before pouring in the chicken to fry, allow to fry for 7 minutes then turn to the other side for another 7 minutes which will eventually turn golden brown at that point remove back to a sieve.

In conclusion wash all your salad vegetables using vinegar and rinse very well.

Peel the back of the cucumber slit open and remove seed rinse and dice

Slice your cabbage and set aside, in addition dice the carrot also in a separate bowl.

It’s now time to mix all ingredients, so at this point get a covering bowl, and start placing all your dice ingredients layer by layer. Start with cabbage for instance as first layer till there won’t be anything left including the egg and green bean.

Cover the salad bowl and refrigerate is equally sweet when it is cold serve with mayonnaise cream (or salad cream)
